Peel Power

Mom's wisdom holds that you should eat the potato peel because it’s good for you. Mom was right on this one as she usually is! The peel of a fruit or vegetable is the part of a plant that protects the precious fruit and seeds within. It is the complex, liminal space that contains uniquely beneficial compounds and packs a powerful vitality punch!

Non-peeled produce contains up to 300% more vitamins, minerals and other beneficial compounds than its peeled counterparts. Notably, peels contain high levels of antioxidants, which have been shown to reduce the risk of cancer, heart disease and neurological diseases like alzheimer’s. The peel is also much higher in fiber which supports the digestive system, helps you feel full longer and feeds your beneficial gut bacteria. 

Liminal spaces are the in-between places, like the place where freshwater meets ocean, forest meets meadow or daylight meets darkness. Liminal spaces give rise to unique critters and powerful creative energy. The liminal produce peel is the space between the fruit and the outside world.
