Sunny-side-up Eggs

Ingredients:

  • As many eggs as you want (2-4 per person)

  • Enough Ghee or Butter to cover skillet bottom

  • Salt and Pepper to taste

Instructions:

  • Preheat skillet on medium heat

    • If using cast iron, preheat for a full 10 minutes

  • Meanwhile, crack eggs into a shallow bowl

  • When skillet is preheated, add Ghee or Butter

  • Carefully pour in eggs

  • Salt and Pepper to taste as they’re cooking

  • Cook undisturbed until whites are set but yolks are still runny

    • Some people like to cover the skillet until the whites set to speed it up. I like the ‘lace’ that forms when the edges of the whites burn

    • Cook until yolks are desired runniness

    • Use a spatula to separate the eggs and pick them up 1 by 1

    • Serve on bread, toast or on top of other dishes
