Sunny-side-up Eggs
Ingredients:
As many eggs as you want (2-4 per person)
Enough Ghee or Butter to cover skillet bottom
Salt and Pepper to taste
Instructions:
Preheat skillet on medium heat
If using cast iron, preheat for a full 10 minutes
Meanwhile, crack eggs into a shallow bowl
When skillet is preheated, add Ghee or Butter
Carefully pour in eggs
Salt and Pepper to taste as they’re cooking
Cook undisturbed until whites are set but yolks are still runny
Some people like to cover the skillet until the whites set to speed it up. I like the ‘lace’ that forms when the edges of the whites burn
Cook until yolks are desired runniness
Use a spatula to separate the eggs and pick them up 1 by 1
Serve on bread, toast or on top of other dishes
